Seriously, with a build plan like that and saying you only want 1-2 days downtime on each part of the build, you have no idea what you're up against.
Like everyone else said; Just buy a late 80s-90s F350 with a 460 & ZF5. They are seriously cheap nowadays. If you're that attached to the family truck, just buy and build the 350 up the way you want and swap the half ton body onto it. Then you're a fortune ahead and have almost no downtime.
You'd be swapping pretty much everything out except the body in your original plan anyway.

I'll make it quick and simple, this started life as an 82 F100 FlareSide, with a 300:
13 years of ownership later, and who knows how much money invested, the only parts from the 82 are the cab and right front fender, and it's still ugly... LOL
What you have planned is a MUCH bigger, more expensive undertaking than you can imagine. The kind of downtime you want is just not possible.
Keep your DD on 35's or less, you'll be able to afford to drive it, and it will be very reliable, even if you leave it stock axles, I would swap a solid 44 in the front and thats about it.
For your build, start with a F350, you will save yourself loads of time and effort.
I really hate to say it, but, you can probably pick up a truck thats already built and pretty much ready to wheel for about half or less than it will cost to build one.

x2 on the cost of buying it done versus buying everything separate.
BTW, pictures and/or threads of -trucks- with details of their new
pin-striping gives me the creeps, anybody else? LOL :)
