The V10 comes in two forms; the 2V and the 3V.

The 2V was used from 1999 to 2004 and is rated at 305 hp and 420 ft lb (this varies slightly due to a change in 2000.)
The 3V was used from 2005 to 2010 and is rated at 362 hp and 457 ft lbs.
The 3V is still available from ford, but only in F450 and F550 chassis trucks.

The 7.3L was used for MANY years. There is also a 7.3L IDI motor that is pretty much unrelated. The 7.3L PowerStroke (that name was given to the DI turbo charged variant) was used from 1994.5 - 2003 and underwent many changes in that time.
I am going to assume you want a Superduty (Post-99) truck since you are comparing it to a V10.

The 7.3L used from 99-2003 is slightly different than that used from 1994.5-1997. Also notice a 1 year gap. No 1998 model year Superdutys were sold.

The 99-03 7.3L had many ratings over the years as things changed, but they were all in the same ballpark. The highest rating it was given was 275 HP and 525 ft lbs.

Also, a V10 and 7.3L are NOT directly interchangeable. There are many electronic changes, and the transmissions are not compatible with one another.
