This is just a guess, but in the older trucks, at least in the FE engines Ford used to bump the number up 1 to indicate a heavy duty truck engine rather than the run of the mill FE. Thus in the heavier duty trucks you had 361's and 391's for example. I don't know if this could still be the case.
