Talking 'bout food again
OK, first a question...or four (who doesn't like to talk about food...really?):
How long can you marinade chicken or steak?
Do you put it in the fridge or freezer? I guess it depends on time?
What things will "cook" the food while marinading (i.e. lemon juice)?
Ideally, I'd like to marinade something, and leave it in the fridge (or freezer?) for a few days, and maybe have a week of dinner already to go, but I don't know what to use, or for how long.
I have made a few quick ones very successfully, like 2 limes and a lemon squeezed, thyme, sage and rosemary, garlic powder, salt and pepper for about 10-15 minutes, and cook it in the juice (along with chicken stock or white wine). Simmer in a pan for a few, cook in a 350 oven for about 20 minutes (maybe a few more), and it makes a good tender chicken breast.
Just looking for some ideas, and some answers to the marinade thing. I love my food.

My mom makes awesome steak that she calls "steak ala mama" and the marinade is
Combine the following in a food processor:
1" section of fresh Ginger root
4 large cloves of garlic
the juice of 1 freshly squeezed lemon
A couple tablespoons of Olive oil
Enough Soy Sauce to make the mixture runny.
Marinade steak or chicken several hours or overnight in the fridge and it will be spicy and delicious when you grill it!
