How limited am I with speed density!?

I just want to know what all I can or can't do. I have a 302 that I wouldn't mind stroking it and getting a cam for down low tq but I just don't know what my limits are with the speed density set up.

Your plans are outside what the factor SD PCM can adapt to, it is preprogramed for a 302 motor with fairly modest airflow characteristics. The good news is if stroke it out to a 347 you may be able to utilize an SD 351 PCM as long as you don't go too radical with the cam or bolt aftermarket heads on it.

I'm on a tight buget so no aftermarket heads but I wouldn't mind getting my hands on GT40 heads and swaping the firing order over to the 5.8 with the 351w cam so would it be best to use the 5.8 pcm if I stroke it?

If you use a stock F4TE('94+) truck cam with those heads that combo should run pretty good on a 5.8 PCM. What year is your 5.0? And what trans is in the truck?

OK that is good news, that is a roller block so you can drop in a factory roller cam assembly... I did the same thing with the motor from my '90 F150, and with the AOD you could eventually upgrade to MAF with a Mustang PCM and that will open up your upgrade options.

The SD system is programmed to be 10-15% rich at WOT (or so I read long ago) so don't increase the airflow more than that amount. And don't do it that far until you've cleaned the injectors first to make sure they're flowing what they're supposed to. K&N + Cobra roller rockers (1.7 ratio) and possibly the F4TE roller cam is about all you'd want to do before getting into trouble.
