There should be a spring behind the escutcheon. Press down on the escutcheon until you see a pin that is installed in the handle. Drive that pin out with a drift.
I used to do this all the time with early VWs. My interior panels are gone, but I'm other members have direct experience with our trucks.
Am I right, or am I just blowing hot air? Please chime in.

Yeeeup,, just push the center of them round duhickies in,,, spring loaded, and locate the round pin and push it through. I used a nail that is smaller in diameter than the pin.
Putting them back on is a breeze if you pre-load the pin in the handle, just enough to still allow the handle to slide on. Once they match up just push the pin on in...
