Carb conversion

The wife and I have been talking about our van. It's an 89 EFI300/6 C-6. Just this week we took care of a belt issue it's been having, so we'd like to keep this thing for another 3-5 years if possible. I am not a big fan of Ford's EFI system, so we're thinking about converting it over to a carb setup. I know that Offenhauser sells the intake manifold for these types of conversions, but there are some things I am not sure of when it comes to this kind of project. My guess is that we'd have to get a few other things for this conversion to become reality.

Offenhauser intake
Carb (what kind would work?)
Old style electronic distributor
Duraspark ignition control box
Wiring harness (not sure about that one)

We won't have the money to do this for a while, but we'd like to at least get an idea of how much it would cost to do this conversion. My thought is that we'd end up spending about $1000, but that's just a wild guess. Any help you guys can give me would be appreciated. How does my list look? Am I missing anything? Where's a good place to order all this stuff from?

I don't know if an aftermarket intake would clear the doghouse in a van.

EFI engines make more power/torque than carb engines. Injecting the fuel directly into the port is much more efficient that a carb mixing fuel and air 12" from the head. If you're not having any issues with the EFI spending $1,000 to change probably isn't a good idea.

Do you have to pass an emissions test? A carbed engine might not depending on the standards and how much of the emissions gear still works.

Well, if the intake doesn't fit in the space then I guess I won't be able to do the conversion.
