Depends on gear ratio in the rear, and tire size. Could be anywhere from ~2000 rpm to 3000 rpm.

Everything is stock the tires are 265 75 16. The engine seems to be working so hard to just cruise on the highway

16" tires, I'm guessing that means it is a F250 or F350. Typically, these had 3.73 or 4.10 rear gears.

Sorry I didn't check the warranty plate but it's an f250. I got her up to 60mph with around 3000 rpm

The AXLE code is stamped on the Warranty Plate, located on the left door face below the latch.

If 8 lug 6.50" bolt circle wheels are present, it's either an F250 or F350.

265 75 16 is not the original tire size, it's a P-Metric radial. P-Metrics were not offered until the late 1990's for Ford trucks.

Radial tires were not even available from Ford for F100/350's until the mid 1970's, and then were optional over the bias ply tires commonly used then.

Original 16" tire sizes for 1973/79 F250's and F350's with SRW would have been: 7.50-16, 8.00 x 16.5, 8.75 x 16.5 & 9.50 x 16.5 for Camper Specials.
