Ditto on stock interiors, at least for the carpeting stuff. No experience with seat stuff with them. Not sure what colors you're working with, but at least for the carpeting they'll send small samples for free. I had an odd color maroon and it was always tough to guess based on pictures. They hooked me up with samples and I hooked them up with cash for new carpeting and kick panels.

I can't help you on the seat cover question but I can add my opinion and experience for carpet. I ordered my carpet from 1A Auto, a vendor I found here on the site. They were the best price for ACC carpet. Shipping is free. (really just included in the single price they give you) Shipping was where the savings came into play.
These prices are for crew cab carpeting so your price point will be lower for a regular cab.
Today the price for the above carpet from Stock Interiors is $174.95 + $56.90 shipping to me, for a total of $231.85
Today the price for the above carpet from 1A Auto is $218.95
Most other places I looked into were higher in price due to even higher shipping rates.
As far as quality the ACC carpet that I got from 1A is a good fit and pile height / thickness.
