You mean like swapping a Chevy 23 degree head to an 18 or 15 degree head? That's for wedge heads only, not really applicable to a DOHC head.

Do a search and find yourself a reputable head...

That's the key right there - does your intake have an exhaust crossover? If so - you'll need the valley pan. It shouldn't ever be a bad thing to run one provided you get get it sealed up properly.
