July 31 1967, IF the casting code is C7__ or earlier. They made 'em in '77 and '87 too.

If it's a 67, then it should be a 289. If it's a 77 or 87 it could be 302 or 351W. 1968 was the first model year of the 302. But I'm not sure the exact month they started making the 302's. Usually a late 67 would be considered a 68 model year. To verify it's a 302 you can check the stroke or the #'s on the crank. If the crank has a "1M" on it it should be a 289, "2M" a 302 or "3M", "3C" or "3M A" a 351W. Or Stroke 2.87" = 289, 3.00" = 302, 3.5" = 351W.

What's the engineering/"casting" #? The 7g31 is just the date code. It means July 31st of the 7th year. Like 85e150six4mtod mentioned you need to check both to know the decade and year. If your casting # starts with C, then that along with the date code would mean it's a 67. If it started with a D, then it's a 77. A E would be 87.
