My flatbed is a work truck, So a lot of torque is expected to be produced. But how much precisely??

You have asked kind of an open ended question here!, Big block....l.is that a 335 series (351M/400) or is it a 385 series( 370, 429, 460), then it will depend on the heads, cam, carburetion, etc. Information is always a good thing when asking questions like this.

If formulated for peak torque around 2600 rpms (making it good for towing IMO), I think with some aftermarket components you can achieve around 1.2 lb ft per cubic inch and maybe a little more.
