TEXAS style English Muffins for BIG Texas breakfasts
4 1/2 cups flour
1 1/2 cups water
1 packet of yeast
1 TBSP sugar
1 TBSP salt
1 TBSP butter, margarine, or ghee (can use other options - it's to grease the pans)
Garlic (optional)
Chili powder or Jalapenos (optional)
*You will need a pair of 9 or 10 inch cake pans, and 3 clothespins to clip them together.
Mix salt, flour, and seasoning options in a large bowl
Mix water, sugar, and yeast in a large measuring cup and let the yeast "PROOF" itself in a warm place.
Set pans in the oven with half each of the butter in them, set oven to lowest temperature and let warm - then shut off oven
*This step melts the butter so the pans can be treated, and also warms the oven for the dough to rise
Mix yeast and water with the flour - adding flour if necessary by dusting it over it until you have a barely sticky, soft elastic dough.
*It is sometimes a good trick to cover the dough at this point, and walk away for a bit. That lets the flour and all that stuff equally absorb the water in all parts and is called letting the dough "REST"
Place dough in one of the pans, and press out until it fills the pan like a pizza crust.
Place the other pan UPSIDE DOWN on the pan of dough, and clip the edges in three places with clothes pins.
Place in oven to rise and fill the pans as fully as possible (maybe 45 minutes)
~The top pan helps it hold the shape, but it ALSO does not allow the bread to dry out - so it's as moist and soft as you can get it!
Bake at 325 F for about 25 to 30 minutes
~When done, let cool. Then lift off top pan, turn over onto clean cutting board, and slice exactly in half through the middle. A long serrated bread knife works best.
**VARIATION**
Add a packet of cheese sauce powder from a box of Mac & Cheese to the dry mix to make a cheese muffin!
You can add two drops of yellow, and one or two of red food coloring to give it a cheery Cheddar Cheese wheel appearance
The result is a dinner plate sized pair of French Bread Muffin halves, that can be toasted to the consistency of a giant English Muffin...
I love these things in the morning, with sausage and eggs, or just plain toasted and buttered!
I personally guarantee you ain't never seen anything like that in a store...

Morning all- coffee's on and it is hitting the spot as it's 29° this morning. I have 12 pepper plants that I'm hoping I can save. Nine of them are "fooled you" jalapenos and are loaded with small peppers. I always grow these because they have no heat and I can control the amount of bite by adding a normal jalapeno when pickling. I went out at 2:30 am and put three gallon jugs of hot tap water under the planket, tarp and sleeping bags covering them up. (Yet another reason that coffee is on time this AM.)
