We need all the info you got on that truck jps. All the spec's and added things, and future plans. Looks like you've got a pretty good starting point. Don't have any experience with the 302, so I don't have any sound advice for you in regards to the intake/carb swap.
The motor is completely stock. From what I have looked up, it has about 169 hp, and 250 feet of torque. The guy I bought it from made it a dual exhaust from the muffler back.

It took me several years of looking and asking in some remote and obscure places to finally find a set of decent old-style mags. They were buried, filthy, and nasty in the back of an old shop somewhere in a small town on a back road. I got a good deal on them at $125, I think. I used some hvac acid based coil cleaner on them several times to get them to look like new. I like them too.

Don't go any bigger than a 600 CFM on a 302 (which is what you have, right?), tuned right with a vacuum gauge, set timing with a vacuum gauge, and keep your foot out of it and I don't see any reason why you can't get the same or better than stock mileage.
Of course, other factors come into size like secondary springs, power valves, jets, etc.
