As far a I know, the low fuel light is preditive it will come on at a avarage fill up time.
Lets say you always fill up at a 1/4 tank then it will come on at a 1/4 tank were if you always fill when it reaches the red line it will come on there.
I have ran mine way below the red line ( not good ) were it took 26 gallons to fill up ...

I do know that on mine, once the overhead says 0 miles to empty I still have about 5 gallons past that. I know this because the last fill-up, I actually pumped 44 gallons.

Think about it, if the gauge were to show the specific amount, when the tank sloshes to and fro, your indicator would rise and fall with the sloshing.
My Ex is more predictible than my F250. I've had the light come on for my F250 while tooling down the freeway, then 10 minutes later, go off. I've also had it come on while driving home, then the next day it's off, and it stayed off for two more days!

My 2003 Excursion 6.0L diesel (not sure if gas motors are different) holds 44 gallons.
My "warning light" comes on with about 60 - 80 miles to go and I have even ran it down to when the overhead console said I had "zero miles" left!!!
When I pumped diesel into my tank, I could get 41 gallons in... so that meant I had between 2 - 3 gallons left or an additonal 30 miles before I ran bone dry (which you should never do in a diesel)!!!
