YES...too much can be a bad thing.
I got sloppy a while back and all of a sudden I was getting some lag and white smoke when I jumped on it to merge on the interstate. The problem when away when I started using measured doses again.
I found these small plastic juice drink bottles with the squeeze drink tops on them (Bug Juice) that are 8oz bottles. I've washed and cleaned them and keep about half a dozen of them filled in the top tray of the toolbox. This way it's pretty much pre-measured to cover a fillup...and I don't have to carry a funnel around anymore...and I don't have to guess when I get 8 ounces in the fuel tank.

Actually.... using more is not harmfull... just a waste of money.
I have spoken to Powerservice over the years and they claim that double-dosing is good and anything more is not worth the added cost of the additive... but even then it would not hurt.
For the poster that stated that he had white smoke... there must have been another problem or the extra additive was cleaning up your injection system, EGR valve and the like???
I have run double-dose of addiitve (grey bottle for 3 seasons and white in winter for anti-gel) and now have 144,000 miles on my 2003 Excursion.
My excursion has a 44 gallon tank and I fill up with 32oz when at or below a 1/4 of a tank. One can not make bad fuel good, but the extra centane and lubricity are the key benefits... and I believe that the double-dosing makes for a cleaner fuel burn and cleaner EGR valve!!!!!

You don't really since pumps are not required to be labeled, but the US mandated minimum is 40. The only time I have ever noticed a cetane rating on a pump was when I used to buy BP Supreme / Amoco Premier LSD which had a minimum of 50. My 6.0L loved that fuel, but I have not seen it since we switched to ULSD. BP is supposed to have a ULS Supreme with a minimum 47 cetane rating now, but I have yet to see it at a pump...

Good to know the only fuel I have noticed a diff in was b100 which the truck liked a lot but I was out of town when I used it. Truck was a lot quieter with it. But here in lubbock I have never seen a cetane rating. I typically use one of 4 stations actually 2 and the milage and truck runs the same. I noticed a 1mpg dropp in a tank with out the powerservice but I. Also haven't run it a lot with out it. Been running power service for 20k and no plroblems at 16oz roughly to 20-30 gallons of fuel. I usually sit and top it off to the neck since I have done the harpoon mod yet.... I kinda like the 1 on 1 with the truck she dont gripe as much as the kid or the ol lady

My only gripe with the powerservice is the bottle leaks. Can't keep them in my tool box after I open them. A lot of the reason I use half a bottle to a tank. How do you know the cetane rating of the fuel? And or how much is in the different amonuts of power service
I buy the bulk the bottles of additive and refill the bottles and they will not leak... which is a good thing.

I also use the white bottle in cold weather and the silver bottle once winter is over. Since I have started using it my mileage has increased by a solid 1 mpg up to 2 sometimes. I eyeball 8 ounces when I fill up. I think any more than 8 ounces to ever 25 gallons is just using more money. Your engine will use what it needs (of the cetane and lubricity) and the rest just comes out in the fumes. Much like a human body and vitamins. It uses what it needs and burns the rest. It isn't going to hurt anything to run extra, just your wallet. If running a double shot gives you better piece of mind then go for it. Everyone has their .02. But to answer the original ? most guys either run Powerservice or the Ford stuff.
