We love our Ex! It actually is to small LOL! Me and my wife and our 4 kids fill the Ex completey on our trips, so I put on a cargo rack out the back on the hitch! You will be happy but with 4 kids and the luggage and ice chest they do fill up pretty quick!!

the truck will be big enough 
. my wife and i bought an x because our suburban's 3rd row seat wasn't as wide as the excursions. we have 6 kids, at the time 5 of them were 5 and under (yes there is a set of twins in there, lol) we needed the room for all the child seats and room to throw a quad stroller in the rear plus all the extra stuff that goes along with them....

They are Wild Country Radial TXR 285/75/R16 on stock EB 16" rims. I will run these in the winter (lots of snow up here) and then summer wheels/tires.

LOL, yes we carry lots of stuff as well. To answer you question yes, the racks fit right in. I don't have a Toy haler but if I did I'm sure we could fill that up as well!! LOL
You should think about coming to the Excursion get together in July!!
