A lot of the earlier ones used the same manifolds. There were a few special manifolds that were more free-flowing, and I seem to recall certain 351W manifolds from the early seventies that more desirable to run on a 302 for that reason, but any overall height such as you mention shouldn't be enough to matter. I would use whichever manifolds fit the car better. If the CV motor has the shorty headers, then I'd use them.

is there any benifit of using shorty headers/ headers going into dual exhaust on a 302 ... that would cost more in gas money right or wrong ?
or would it be the same amount of gas money I was using in the 351w, running with stock manifolds and 2 foot long rusted up y-pipe filled with holes and no exhaust past that ?

The W pan has a larger semi-circle in the rear where it goes over the rear main bearing, due to the W's larger (3") mains, so it won't fit the 302. I suspect you have a front sump pan in the LTD and the CV probably had a dual sump pan. The front sump pan is quite common, you'll just need the pan and the pickup tube to match.
And the shorty headers shouldn't get you any worse milage, and with a decent exhaust system behind them it might do a little better.
I can't be sure since I'm not as familiar with automatic trannies, but it occurs to me there's a chance that your torque convertor from the LTD won't match up to the flex plate on the CV motor. Don't just switch flex plates as the imbalance between the two isn't the same. But we'll cross that bridge when we come to it, it may fit, I'm just not sure...

if you try to use the 351 flexplate your 302 will blow up in probably a week or less... the 1991 302 has a 50 oz imbalance and the 351w has a 28 oz imbalance... the difference will toast the bearings and possibly break the crank. as for the oil pan, i just ordered a brand new front sump one from summit for my 302 based stroker... 75 dollars for the chromed pan and pickup.
