Eastern NC BBQ Sauce:
2 pints apple cider vineger
2 tablespoons dark brown sugar
2 tablespoons salt
1 tablespoon crushed red pepper
2 teaspoons ground red pepper (cayenne)

Mix it all together and let sit for several hours before using.

Use on slow cooked pork (pulled), not-so-slow-cooked pork (chopped), slow cooked chuck roast for beef BBQ. Just my spin.

Do most people call it BBQing...because around here we say grilling.

I'm so spoiled. We BBQ here year round.

Last week we did BBQ chicken. It was so good we had it again two nights later. The secret is to boil the chicken first and then smother it with Jack Daniels BBQ sauce (the best BBQ sauce I've ever tasted, BTW) before grilling it for 10 minutes. This also works for ribs and for deep-frying wings.

You are right. Grilling is when you use direct heat (like you basic charcoal or gas grill). BBQ is when you use indirect heat (like smokers) Grilling is also cooking faster at higher temps.

There's a season for BBQ? If it takes less than 4 hours to cook (hopefully more) and doesn't use smoke and wood, please don't call it BBQ.

Dono's got it. It's grilling if there's direct heat or gas involved.

As far as I'm concerned, you can grill or BBQ any time of year, though BBQing is much easier when it's warm out (easier to keep that constant 200-210F temp).
