Also, bone stock. Not a single mod. I keep up on the oil, filter and fuel filter maint. I run Diesel Kleen and all in all I have had very few problems ( oil leaks aside ) with my truck.

Spraying coolant from the degas bottle IS a headgasket symptom. If you are simply going by the stock temperature gauge to say the truck is not running hot then you might be unpleasantly surprised. The stock gauge basically indicates cold/normal/hot and is nothing more than an idiot light with a needle. Bone stock means nothing as far as headgaskets are concerned. And it may be something as simple as a bad cap.

With out knowing what ECT & EOT actually are or anything about your truck. I would be looking at oil & EGR coolers.
Pulling load = higher exhaust temp. + restricted coolant flow & oil temp rising in oil cooler = flash boil in EGR cooler.
You can't rule out head gasket.
A flush & coolant change & install filter might be all you need.
But you need to monitor (before & after) ECT & EOT to know if it helped.
Something to monitor engine is necessary to stay ahead of potential problems.
