I took a look in my Ziploc bag of bed bolts from the tear-down of my 1956 F-250. I've got four sizes of bolts and I can't remember exactly where each goes (my bed is in a barn about 5 miles away and it's raining hard) but you can figure that our from your setup.
There are a bunch of 3/8-16 x 2" long and 3/8-16 x 1-3/4" long carriage bolts. There are also a bunch of 5/16-24 x 1-1/2" long carriage bolts with 1-1/8" OD flat washers under the nut end. Finally, there are eight 7/16 x 4-3/4" long flat head socket head cap screws with 1-3/4" OD mushroom washers under their heads.
McMaster-Carr (www.mcmaster.com) has most of this stuff in stock in various grades (grade 2, grade 5, etc.) and materials (zinc plated, 18-8 and 316 stainless, brass, etc.).
