'98 F150 Door Bell

Is there an easy way to unhook the "bell" that sounds when the truck door is open?

Yes, but the "easy" way is not a particularly "good" way.

The easy way would be to remove the door panel (or the kick panel) and cut the wire.

The "good" way would be to put a switch in the circuit so the dome lights and teh chime can be controlled either manually or automatically.

So the dome light and the teh chime are in the same circuit? If so, if do away with the chime, that means I will do away with my dome light. Do you suggest putting the switch in the wire that you suggested cutting? Thanks!

No, they're not on the same "circuit". The chime is integral to the GEM module and is used by the GEM module for any audible warning. The door latch switches, the key-in-ignition-switch, headlight status, and more all feed into the GEM module which decides, based on its design, when it is appropriate to sound the chime.
