How would a shop charge me for this service?

I purchased a front end kit for my 89 XLT. It included axle (U?) joints, inner/outer bearings and misc seals. I use an out in the country shop that will install my supplied parts but would it be resonable to have him quote me for the axle joints and not much more for everything else? Seeing as he has to take all the other parts off to get to the axle joints it shouldn't cost that much more to replace the bearings and seals at the same time right? I just don't want to be charged "full book" hours for the bearings if he has to take them out to get to the axle joints. Is this how shops would do it, charge me less?

Not trying to be chinsy but I just don't want to get bent over LOL

Most shops quote labor from flate rate manual the labor should not be quoted for each individual repair but complete overhaul. Start bending

most shops that I have been at dont charge labor for parts that already have to come off. They only charge for the part it self. They shouldnt charge you labor for somthing that is already included in the labor of something eles. In other words the labor for say changing a upper radiator hose is included in the labor for the T-Stat, because it has to come off to do the T-Stat. You get what I am saying.
