There aren't any v10's to test drive arouind here, so I was wondering if anyone here can comment on the "seat of the pants" difference between the 2v and 3v engines?

Ok, I'll do my best. I have a '01 V10 CC 2WD with 4.30's, SB. Drove an '05 4x4 with 3.73's, it also was CC + long bed.
On a desolute stretch of road I hit 77 MPH with my '01. The 05 over the same distance went 81. The 05 was seamless in its shifts and SEEMED to pull harder.
Considering that the 05 was geared higher(lower numerically) weighed quite a bit more(4X4, LB) and had 12 miles I'd say the 3 valve is at least the 50 or so HP more than the 2 valve. The tranny also seems light years ahead in the shifts and keeping the motor in its powerband.
NO 3.73 with the V10
If you go to Fords site and try to build it, a window pops up and tells you to change something. both 3.73 and 3.73LS are not avalible.
I stand corrected. I noticed that the pop up window asks you to change something, and that is to change from 3.73 to 3.73 LS with the FX4 package.
I thought that would hold those gears throughout the rest of the build process, but when you go to the next page and select your engine, the 3.73's are available for the 5.4, the PSD (only option for that motor it appears), and they are not an available selection after you pick the V10 motor. It doesn't alert you to this change, you need to pay close attention to that, which I hadn't until now.
I spec'd out both the 350 and 250 to see if there were option differences, but I only had the options of 4.10 or 4.30 once I decided on the V-10 on both trucks. I test drove an '04 back-to-back with the '05 and there was a very noticable difference in the delivery of power with the '05. The '05 engine seemed much more responsive through the powerband and seemed to accellerate much more smoothly than the 2v. From my experience with the 3v, I wouldn't trade it for the 2v. I've got plenty of power for anything I'll use it for (and enough for things I probably won't) and get 90+ percent of the mileage in-town that I was getting in my '02 Nav. with a 4v V8 that drank premium unleaded.
I killed a 2V F250 SB 4x4 V10 with 4R100 trans and replaced it with 3V F350 4x4 V10 5R110 TorqueShift trans. The 05 F350 is 600lbs more empty weight.
Seat of the pants, the extra HP and Torque of the 3valve is very noticable. But the real performance gains are more from the trans switch and I am sure glad Ford is mating the 5R110 now! This trans makes all the difference. Tow/Haul mode with compression braking by keeping the torque converter locked on down hill side when you lightly apply the brakes is very well done.
My 01 was VERY strong and I kept it bone stock. The new motor is a little stronger but so far is proving to be thirstier. Part of that is my jump from 3.73:1 on the 01 to 4.30:1 on the 05.
I also notice that my 05 is MUCH quieter! Some of that is wind noise, I had a factory visor on the 01 (Platinum Edition) but most of the noise on the 01 was from a poorly designed factory exhaust system and Ford radically redesigned the 05s 3 valve exhaust.
I would not trade a 02,03, or 04 just to get a 3valve. I had planned to test drive an 05 last year, and even if I had not killed my 01, after I test drove an 05 3 valve I would have talked trade with the dealer.
