i have a 1985 F150 300
i have rebuilt the carb re installed it truck starts and idles great but it stumbles and chugs when ya hit the gas hard it will rev fine if ya gently roll into it
i have adjusted the mixture screw?? till it runs nice and smoth and pulls 21" vacume with a fairly steady needlle (jumps about a 1/4" (of vacume) fairly rapidly (about 1/16" needle movement on the gauge)
any ideas whats up?

If it pops back through the carb then it is too lean. Since it idles ok, I would look to the acceleration pump adjustment. Increase the stroke a little and things should improve. keep going until it accelerates without missing. Good luck.
