16x7.5 or 16x8 Wheels for 285/75/16 Tires??

What size wheels are you guys putting the larger tires on?

I spend 90% of my time on the blacktop, but go camping a lot and have gotten stuck with the stock POS tires in mild mud. I want a good ride, good looks, quiet, but still able to perform. I had some BFGs on my '87 F150 4x4 and I loved them, so I am inclined to get them again. I've got a 350 4x4 now and I'm looking at the following tires:

BFG A/T 285/75/16
BFG A/T 295/75/16
Goodyear Wrangler AT/S 285/75/16
Dunlop Radial Rover A/T 285/75/16
any other suggestions?

I checked out the tire web sites, all of the above tires (except the Dunlop) list a 7.5" minimum wheel width, stock superdutys are a 7" wheel (confirmed by dealership and local tire shop). I've seen a 285/75 BFG on the stock wheels, it looked good except the center of the tire was bowed "up" a little bit, it wasn't flat across the tread. This doesn't seem like a good thing.

What size wheels do you all use? 7.5", 8.0", 8.5"? How much backspacing? Stock is 100mm, someone said 110mm backspacing would work, but that seems like the wheel might rub the spindle. What have you done?
