Have you been to a local exhaust shop? Probably there would be an undetectable power gain with 3" vs 2.5" exhaust. At least using a butt-dyno.

Duals/headers on a 302 probably isn't going to buy much, perhaps better MPG. For a stock or even a mildly built 302, 2 1/4" duals is all that is needed, 2 1/2 or larger wont buy you anything. You'll have a good chance of having an annoying drone with 40's. Straight out back or side exit? If side, in front of rear tires or behind? That will have some impact on the noise level inside the cab. IIRC 40's are pretty short so if/when you decide you've had enough, there should be enough pipe to take those out and add larger mufflers.

An '86 is fuel injected, no? If so you have at least one related detail to deal with, O2 sensor(s). Hopefully you can get that to work nicely with your ECM. I'm sure others have done this who may chime in.
Good luck!

Dual exhaust

Just be sure to add a balance pipe which may quiet some droning.

Have you looked underneath at your truck? Not much room for duals, they have to both be run on the pass side and then cross back over if you want one to come out on the driver's side rear.
