Hi, keeping it short, I will watch the coolant gauge in my truck rise until it gets to about 1/2 to 3/4 of what it should run at, but then the gauge says the coolant temp drops right back down to just above the operating temp, I've felt my coolant lines when it does that and they are still hot so it's an electrical/sensor issue, but im not sure where to start
Most likely its not electrical, but rather you have air in the system. That upper hose on the 351 sits higher than the top of the radiator, and it's a stone cold bee-yotch to bleed sometimes.
You are seeing "normal" thermostat operation?
When that thermostat opens and lets cool coolant into the engine, the temp gauge goes cold
The hose gets hot due to the thermostat just let hot coolant into the radiator
You can watch that happen a couple of times as the engine gets to normal operating temp
