I need back brakes parts right & left . Both metal cables are bad . Are these parking brake cables ? More importantly are my brake shoes 11" x 2 " or 11" x 3 " ???

RTT, I found that NAPA is a good source for the emergency brake cables, and Rock Auto a good place for pads and spring kits. Your 71' F100 should have a Ford 9" rear end...confirm with your vin number and pictures. My 71' F250 has a Dana 60, which takes 2.5" pads and the axle has to be removed to pull the drums. Can you remove your drums once the wheels are off...might be the best way to ensure you buy the correct parts.
I've used it on both my 70 F100 and my 86 F150. It includes new auto adjusters, which makes things MUCH easier as you don't have to worry about the condition of the old ones. And the kit is CHEAP.
I've also had good luck with wheel cylinders and brake shoes directly off Amazon.
I got parking brake cables off Rock Auto. Here's a screenshot that shows the part numbers. Verify then for your truck of course but they fit my 70 shortbed just fine.
I just finished replacing everything on my 69 up to the backing plates. Everything came from Napa including cylinder pins. Everything was in stock at my Napa. I was a little annoyed at metric bleeder screws but its the world we live in. Really happy with everything I got.

NAPA might be slightly more expensive, but it's great to get direct from them in the event something isn't correct and you can return the part versus mailing it back.
I ran into the metric bleeders as well, but I ended up replacing my bleeders with Russell Speed Bleeders so I didn't need help bleeding my brakes, and those are SAE. Worth the extra few bucks for me.

I do like dealing locally & did not think of NAPA . I do use them but kinda assumed these may be more like special parts to find. My parking /emerg cable is ok I think , the small metal cables inside the drums are what are bad.
I am really curious as to if 3 inch shoes will fit . The back drums I got off & the shoes are installed wrong so I do trust if they are the correct width . Passenger side had a spring fall out & small adjuster bracket fall when I took off drum .
I blew dust out with air & ready today to get front drums off . I think I will have drill out the spring holders or maybe turn the adjuster so maybe the shoes will shrink inside the drums so I can pull them off !!!

As far as bleeders , great invention & like to have but they are $36 apiece , or $16 too much for me because I bought a great used Mitivac 8500 to bleed brakes by myself so will stick with the 8500 for now.

If you have an O'Reilly local to you, they may be able to turn your drums for you. I got my two original FoMoCo front drums from December 1969 turned in 2019. Not often they turn 50 year old drums! They charged me $10 each to do them and it kept me from having to separate the hubs from the drums to replace the drums.

They charged me $10 each to do them and it kept me from having to separate the hubs from the drums to replace the drums.

Yeah, pretty much. If the surface is grooved, they should be turned so they are smooth again.
On my 70, I had the fronts turned. The rears measured too thin to be turned so I bought new ones. On my 86, I sprayed brake cleaner on the drums (front discs by then of course), wiped them down, and called them good. 😂

O' close 2 me also & want $25.00 a drum . Mine look good at first glance , will check more later .........
Not surprising the cost to turn the drums went up. $10 was crazy cheap given how much time they spent doing the job. Hopefully yours are good. How did the shoes look?
BTW: Where were speed bleeders $36 each? That's about what I paid for a complete set of four.
