How do I remove the black plastic ***** from the dash (lights, wipers, choke etc.)? Next how do the chrome bezels come off?

They are each a little different than the other.

For the lights **** you'd want to reach behind and find the **** button to press that releases the shaft and **** as a unit.
For the choke there is a nut on the back side that needs to be completely loosened and then the entire choke cable pulls out through the dash and rear nut. Bezel is part of the whole assembly.
Wipers - probably a spring clip inside of the **** - these can be a bear. If it is an Allen head set screw they are much easier. Then once the **** is removed then you can use a tool to remove the bezel nut.

The bezel nut for the lights, wipers and fan look essentially like this

The tool I use to remove them looks like this

Here's a picture of a couple of choke cables. Both NOS but the one in the wrapper is the universal C5TZ-9700-N which was cut to size and it has a finer thread for the rear nut and it also has the Allen set screw to allow removal of the **** from the cable.

Hey Chad,
The little ivory colored insert in our choke **** is missing. So if I understand you correctly we have to replace the whole cable assembly not just the ****?

You can get just the insert from places like Dennis Carpenter. The original choke cables came with the **** already installed. You can remove the whole **** and replace it by either gluing a new one on or using one with the built-in Allen set screw.

The choke **** was original part of the assembly - glued on I imagine - to the metal rod that controls the center wire.
