Is 11mpg normal, I have sct tuner set on towing, do not drive it to the floor and not much change whether pulling or mty, egr deleted and exhaust gutted? 103,000 miles

That could be as good as can be expected or way low.. depends on the exact powertrain combo(engine, trans, gears, tire size), where it is being driven(city, highway, flat lowlands, mountains), and towing or unloaded.

Your Mileage May Vary
If I am downtown, with stop & go traffic, where I'm sitting & idling at green lights........I get about 8 MPG. I'm not kidding. I've seen this, and the math makes sense. You can idle away up to 1 gallon per hour, which got you zero mpg.
When the truck was new, and stock, I saw upwards of 24 MPG on the trip display on my ScanGauge II. Which is not a real world number at the pumps.
The truck currently has a 6" lift kit w/ 35" tires, and 4.10 gears. I can anywhere from 10 - 15 MPG tank average, in the real world @ the fuel pump. ScanGauge II shows freeway trips at about 18 MPG.
You have to figure in real world circumstances. Which engine does your truck have? What size tires & gears? Which body style? How much does your truck weigh? How much do you weigh? Do you have a tonneau cover, camper shell, or ladder rack? What type of tread do you have on your tires? How much air is in your tires? Do you have those little trees on your mirror so your car won't smell?
Poor mileage on large pickups is, for the lack of a better word, normal. But if you are uneasy, have your truck checked out. See if you have clogged feel delivery, bad spark plugs, loss of compression, obstructed exhaust, or if your automatic transmission shift strategy can be improved for fuel efficiency.
Towing loads the engine more than normal driving and I wouldn't be surprised if the "towing" selection reduces the timing, which could cause poor economy.
