I had some issues with the Ram "exhaust" brake and transmission that they couldnt/wouldnt fix. I couldnt get the exh. brake to work unless I hit the throttle. The trans wouldnt downshift to keep the rpms high enough for the exh brake to operate. I even showed the dealership tech how it should work in a new truck off their lot and they just kept saying nothing was wrong with it. The last straw was the designating me as a "star" case and I couldnt get ANY dealership to work on it without calling corporate office first. I took it in the shorts on the trade but piece of mind is priceless.

I went with the XL for my '17 F250 6.2 SCSB 4x4. I wanted manual 4X4 and vinyl floor (easy to clean, especially in salt season).
Aside from that I got power windows/locks, tinted rear windows, alum. Wheels, chrome bumper (NOT grill also), base Sync system, manual cloth seats , and remote start, e-locker, camper PKG(extra leaf). So, almost what a low end xlt would have , but without the things I didn't want (ESOF, Carpet, etc.). Also significantly (couple Grand) less than the base XLT would have been, and I still would have added options if I went that rpute.
XLT beige seats looks good to me, as does leather but the huge $$ to upgrade to leather wasn't worth it in my book.
I will say though, my favorite feature of these trucks is how customizable they are, to almost every concieveable taste. You really can't go wrong with a trim level choice

I paid 1K more to get the limited over the platinum cause I’m just not a huge fan of black leather. Using it for my work truck, my black leather in previous trucks always looked terrible. Reason I went for all the options was because in the past, I bought mid line trucks and always regretted not getting a few more options. I put on about 70,000 KMs a year and I’m in my truck about 8-12hrs a day, 6 days a week. That justified getting a high end trim package just to make sure my driving experience was as comfortable as could be. I had 2 days over a long weekend to buy a truck that was all set up with spray in box liner, mud flaps tonneau cover. Didn’t have to many options as my profession doesn’t allow me to take a day off to truck shop. I drive 16hrs just to get to my work and sure ended up liking the adaptive cruise control and massage seats.
