Morning World !! Yes, Ken the pierogi party went very well....everyone was well over their daily caloric intake and I couldn't find anyone that wanted me to serve any more. Had enough left over to freeze and couple of meals later in the year.

Looks like a more normal clime week ahead...even a chance we'll see flakes of white crap falling before the end of the week.

Prob will not be on here tomorrow.... gotta be at the Surgical Center at 7 tomorrow morning so they can open up my left hand to take care of the carpal tunnel... local antithetic so I'll be able to watch !! 8 weeks after this one I 'll have the right hand done too. Don't know how much they will bind up my left hand tomorrow so will err on the side that I won't be on.... I'll be one-handed but I guess I will be able to hunt and peck with my right the day after. The Doc doing the surgery is really good...he's the same one that did Penny's hand back a number of years ago when she broke it falling out of the RV. And she is back to her knitting and uses it as if nothing happened now. And she really screwed up that hand...she got the metal inside to prove it.

Morning everyone.

Bud good luck with the carpel tunnel surgery tomorrow and a speedy recovery.

I have not had any good pierogi in several years and boy are they good.

Think of it as a steamed dumpling filled with the cheese and potato mixture. Then they are boiled and pan fried with butter. When I have done some store bought ones I will cook up some onions with them and some polish kielbasa.

Pat, I just Googled it and they say you can bake them along with boiling, then frying them.

Mine are only boiled..... about 10 minutes..... I will pan fry them in butter after removed from the freezer tho.... if you try to re-boil them, they usually lose their stuffing. When I roll out the dough I crack an egg into each batch to help hold them together in the boiling water. About twice as thick as a pie dough. Sealing them is paramount. Some use their fingers - some use a fork. Using ice cold water makes a nice seal-able soft dough. Tough dough makes for a lot of potatoes in the bottom of the pot. ie: NOT GOOD !

3 weeks more of break and then back to work. I wonder when the gov shutdown will end.
