I saw the bulletin here on the forum from Ford about DEF getting old prematurely due to being stored in excessive heat. My DEF stays in the garage so its not too bad. But the DEF I have in there right now is Motorcraft but the dates are about a year old.
So for knowing "just in case". What does happen with your truck if your DEF has gone bad due to age or excessive heat?

So, what is excessive heat? DEF in the truck's DEF tank is at Ambient temperature on a daily basis. It got up to 108F the other day and the DEF in the truck surly got up to that temperature and most likely higher as it is next to the vehicle's exhaust pipe. Just a few comments based on my observations.
I have been looking at a 55 gal drum of DEF and the dealer said that it will last about a year to a year and a half out of direct sunlight and in cooler temps like a garage etc. I tow a lot so that is why I was looking at this vs the jugs or 5gal buckets.
Just my 2 cents on the length of time it'll last ya. However, I still don't know about what happens if you use off spec fluid. My local stealership was not very knowledgeable when I asked this question.
I year should not be an issue in a sealed container...I did it with both my 2011 & 2012 6.7's...
we use 55Gal drum at the Fire stations with hand pump (Just sits out in the bay).... some stations only have 1 DEF truck... so it sits for quite a while.
We have had issues with the DEF trucks, but not a DEF repair issue per se.....
More like these super emission trucks are heavily abused with HARD / SHORT runs and put away wet
They are supposed to exempt Firetrucks in the future

We are emissions exempt here in NC (or they just let it slide). We just deleted our 2011 brush truck, drives A LOT better now.
Edit: Our pumpers and tankers are pre-emissions. The other stations in the area are burning up asphalt and starting brush fires when they go into regen on scene.
