Has anyone replaced the small OEM sway bar with something like a Road Master on their new 2021 F-350 dually 4x4 yet? I carry a truck camper and I think a thicker bar would help out.

Yes do it. It will drive like a new truck. I also have the camper package. I replaced the oem with a Billistein sway bar. I carry a 4 wheel camper.
The install time was 30 minutes. they make them in batches so you may have to wait for it.

 

I added the Hellwig Big Wig rear bar to my 2020 in preparation of towing. Install wasn't bad
