Motorcraft 2150. noob questions.

First time messing with a carb. Found one in the junkyard and wanted to clean, rebuild, play, learn. It seems to be a 2150. Came off a 351.
My 79 F150 with a 300, single brl carter carb, electric choke is working fine. Eventually, I'd like to get an offy and put on a double brl like this one.
I got her all apart and soaking in carb cleaner now. I'll order a rebuild kit and watch youtube. (That Mike guy on youtube seems to be cool to order from)
Just dumb questions. If anyone can hit on one of these, that would be great.
We don't have 'emissions' or 'inspections' here. I don't want any of that crap on my truck. ie, how she is now.

1: I know this 2150 has this external choke pulloff thing. I don't like the look of it. I want to get an electric choke and slap on here, plug into my existing wire. Can I remove this "pulloff" thing? Just plug off the vacuum it used?
2: Going by this metal tag, what does that tell me?
3: I don't want an EGR. This had a big spacer with EGR on it. Can I just not use that spacer and move on... or.. do I get other spacer without the EGR nasty looking thing sticking out?
4: If I cannot 'not' use the pulloff thing, can I convert this to a 2100 that has the 'pulloff' like embedded onto the carb?

Thanks! I just want her to be as simple as possible without any extra crap on her.
