49 Ford with 351. Cam and stall suggestions?

Most Cam Manufacturers today list a good deal of the information you are looking for in their Catalogs or on their Websites. Usually, for each part number they will list the intended RPM Range, Idle quality, Compression Ratio, Differential Gearing, Intake Manifold, Carburetor CFM, Torque Converter, Exhaust System, and Vehicle Weight requirements. Comp Cams even has sound clips if you want to hear how a certain Cam lumpity-lumps..... If your engine is relatively stock with stock heads, you will be confined to Cam Profiles with Valve Lifts the Heads will allow.
Your best bet is to contact their Sales folks and let them steer you through the questions and answers they need for a recommendation. Keep in mind that Camshafts aren't stand-alone parts. They operate within a System they need to be compatible with. So all of the Valve-train components surrounding the Cam need to be verified as compatible.
