I have an 88 F250 351 EFI that has the air system stripped from it as well as the MAP and EGR.I am trying to get it running beyond an idle and I suspect that the MAP and EGR are are the culprits.Do I need both MAP & EGR? Can I run one with out the other?

you need the map sensor. it is part of your fuel injection system. what it does it detects engine vacuume and then sends that information to the computer. when you hit the gas you momentary loose engine vacuume, the map sensor picks up the loss of vacuum and sends that info to the computer which will then adjust or increase he amount of fuel. the map sensor should mount on your firewall and have a vacuume line running to it and coming strait from the intake. it will also have a electrical plug in it. I accidently burn a hole in my vaccum line running to the map sensor, and truck would idle but wouldn't run worth crap. it would blow black smoke and backfire.
as for the egr, I am running just fine without one. Mine went out about 3 years ago and instead of paying $70 for a new one I just unplugged the vaccume source for mine. but there is absolutly no difference in any performace.
in short, buy a map sensor and forget about the egr.
