Did your SES light come on?
If so there are codes stored. Most code readers can not read codes from a 7.3 because it is not OBDII compliant. Smart phone apps Forscan or TorquePro with an OBDII adapter will work very inexpensively.
As to your problem, it sounds a lot like a CPS issue. Please do not buy aftermarket sensors for your truck. They are know for short life spans and in some cases just plain don't work out of the box.

I had that happen once. Just running down the freeway at 65 and snap it suddenly quite!
I cost over the side of the rode. She relights on the first try and I take her home. I assumed it was the recently added chip. I did an R&R cleaned the PCB some more and it has not happened again.
When I had an aftermarket CPS my truck would stall sometimes but it was always at low speed as in coming to a stop light or sign she would just fade away. She would always restart with no problems.

Sounds an awful lot like a CPS issue, which is very common on the 7.3L engine. They are relatively inexpensive (around $25 from Ford) and you should always keeps a spare in the glove box. I would try replacing that first. Also, scan for codes to see if anything pops up. Do be aware that sometimes a code will throw for a CPS issue and other times it will not. Out of the three I have had to replace on my truck, only one of them threw a code.
