For all intents and purposes, they should all work about equally as well.
The adapter will give you many more options but very likely at a higher cost.
A Y-Block truck automatic will be easiest to fit since it was designed for the task.
From a gearing standpoint, for street use only a modern automatic overdrive will get you something that is much more beneficial but that will only come into play for highway use.
For racing, other transmissions could be better because of reduced parasitic loss and parts availability, although factory Y Block transmissions can be made to support quite a bit of power.
So like many things, it boils down to your goals.

If you decide FOM or FX, you need to find a 61/ COM main case as it will have the DUAL RANGE feature and a vacuum modulator valve as opposed to the earlier TV (throttle valve) setup.
Ideal would be a 68/ FMX. That is where FORD redesigned the trans putting the heavier MX internals into a FX case by eliminating the rear pump. It was also available SELECT-SHIFT as were a few 1967 FX models.
