302 sd to 351w mass air

I wanted to build a gt40p headed 302 for my 18' flat bed with 5spd (will be right at 26k fully loaded with scrap pulling a 24' trailer) and i kept fighting the logic of swapping to 351 (had one got terrible mpg) but after reading many posts it looks like mpg shouldn't be effected loaded as much as unloaded, while switching to mass air should offset the loss. To get to the point, has anyone built a gt40p headed 351w purely for towing? The goal would be 300+ hp and 400+lbs of torqe Im thinking 9-9.5-1 comp, roller cam, 1.7 roller tip rockers long tube headers, elect fan. Under drive pullys, ignition upgrade. I looking for build recommendations. I will be building it over the winter, picking up a 99 explorer for scrap, pullin heads, intake, ecu and all the related parts i csn use on the swap. (Any one use the piston n combustion chamber coatings?) contemplated 393 stroker with parts bein so reasonable n readily available. But doubt the gt40p head is enough head for it. I put a few thousand miles on a week, usually runnin at 20k lbs. The 302 actually isnt horrible except on hills.

Id also be going gapless rings, and the crank case evacuator
