I captured some data from my truck this afternoon on my way home from work. I was wondering if it look as it should or if something seemed off.

This was at about 65 on a gentle incline. The truck is a 97 cclb 4x4 with 3.55 gears, 35x12.5x17 tires, a 1.00 ar housing and a 6637 filter.

 

Nothing seems off given the what you are showing here. Play around with the logging feature to record data over time, and save for later as Excel files. It will help to diagnose problems when things aren't working right or performance is down.
