I don't want to be a debbie downer... and everyone should do what they think it right and within the limits of their driving ability and vehicles ability.
If you are in a fatal accident, they can always impound the truck and RV and weigh it. They could then look at tire weight ratings and condition, brake condition, axle ratings, registration, and the "sticker" on the vehicle itself, etc... and go from there. Will they? No clue. The place I worked for - if the investigator thought overloading could have been a cause of the accident or death they would and have... And thinking you could be smart and remove the sticker won't necessarily work either.
Other things they will do is pull the trucks computer and your cell phone records. And if the police don't, your insurance company probably will. (ours did in our case even though the police did not)
Just my .02. I bet way less than 1% of the population goes through this and that is good thing.
