Truck is 2wd but will have a rear sump oil pan from a 4wd due to the cv swap. The fuel tank is in the rear behind axel.

You meant 16 bolts per head, right? According to FE guru Barry Robotnik, the FE Cobra Jet head has eight more fasteners than other FE heads in order to accommodate "installation in shock-tower-equipped Mustangs and Torinos." See the last paragraph here.
This doesn't mean that you have to use all of them.
I am using the Edelbrock aluminum heads for FE which are also tapped for 16 fasteners per head. I will only be using the two at 6 and 12 o'clock. My '76 F-150 RWD LWB truck has the standard front suspension.
Not having a mid-ship tank is another good thing. Those tend to interfere with long tube headers.
So the bottom line is that you have a very wide range of headers to choose from. Almost anything that is available will fit. Now, all you have to be concerned with is getting the steering linkage to clear the pipes you choose.

The issue is and always will be long tubes and the trans cross member unless special shorties of midlength headers whci provide more room to work with.

Agreed that it shouldn't be a problem but some have found ways to get boxed in. Getting the right hardware is great insurance against that.
