Another 07 owner here, came over from an 02 7.3 that was darn near problem free for 150K miles. Except for that crank position sensor So I did months of reading here on the 6.0 page and decided the last year made would be my best bet for a "trouble free" truck. there were several changes made on the last generation 6.0's. I was looking for a low mile unit that still had some warranty left, got lucky with mine picked it up about 5 years ago with 19K on the clock now with 115K only real problems was a HFCM failure shortly after purchase it tool out injectors but thank god I was still in the 3/36 warranty period. Not sure about better bolts & gaskets but I think I read here about automated head bolt torqueing machine or something like having issues on early units but I think the later motors had most of the "bugs" worked out of them. these later units have the Snap to connect fitting on the high psi oil pump problem I have my up-grade kit but wont change it until I do my new oil cooler sometime this year as my deltas are climbing. That said it pretty much depends on how well it was maintained by previous owner but being a 6.0 owner you already know how important regular maintenance is. You know how it goes, manufacturers usually get it right just before they quit making something...
My understanding is there were some changes after 04. I don't think the head gaskets and bolts were changed, if they were its not much better. Mostly turbo and intake changes is what I understand. And that may have been the 03 to 04 model year change.
