Why do people do this?
One of the reasons for those abortions is because of the quality of the gm bodies.
Back in the 30s when Ford ordered the metal for the bodies they specified a type of metal, when it was delivered an inspector checked if it met the Ford specification, if it failed it was sold to gm. This story was printed in OLD CARS WEEKLY several years ago. That is why the Ford bodies have always lasted longer.
Having A Sun tach dizzy machine to work with made Y blocks easier to do dizzy work.

A Chevy dizzy with window cap sure made it easier setup the dwell.
Also did not like Big & SBC fuel pump push rod that would slide out just as your really to install pump. Nothing that some grease would take care of. Or rotate the engine also would help over come that. Just a pain to deal with.
I never found or had any real issues with the GM motors having had a 51 I-6 to a 327 63 vet then a 70 402 elcomino that all gave me great mileage plus mpg.
I've seen and done many engine swaps since the age of about 12 helping my older brother and his friends with there vehicles as they would all hang out and working on their &s street rods.
I've have read dozens of motor & tune up manuals from about age 10 and worked in three shops last one being a brake & front ends repair.
I know back in the day there was less problems for new car & trucks versus the last 15 yrs of vehicles being made to date.

I had a guy wanting to buy an item for like $150 then shows up saying I only have $135 as, I posted it as price as firm! But the guy brings a friend with him. So, I say borrow $15 bucks from your friend. So got $10 bucks out of his friend. So I called it good and sold the item. I still made some extra bucks $45 bucks more then I paid for the Item..

Had a kid drive 5 hours to pick up a car I had for sale. Gets in at midnight after I had driven 2 hours up to meet him at my folks place.
Now, the price had been set at $5500 prior to us meeting(I even told him I'd send him packing if he tried BS'ing around) Kid shows up with his buddy...checks it out, drives it, and wants the car...offers me $5k since he' drove all the way here, and has to get a hotel, gas, food etc) I say a few choice phrases, followed by.."safe trip home"...walk inside, and close the garage on him.
This is 1:00am at this point..he has been in his buddies car at the bottom of my driveway for a while at this point, and I walk out to ask if they needed directions to a hotel, or if they need a Sheriff to show them? He pulls out the money, gets keys and title...rolls out.

We all like a deal but when your already getting one and go ahead an buy it being just being happy at that.
I had a few guys say since it's at the flea market, I want to feel I'm getting a great deal by low balling a guys price he wants for it.
I've sold for a while at the loco flea market yrs ago and would sell and item low priced for a fast sale an still make a 100%+. Then their always a guy wanting to beat your cheap price down even more.

You are right--beautiful truck but a disgusting thought that it has a sbc in it. A few months ago on our local Craigslist there was a beautiful 1955 Mercury 2 dr HT listed. It was 100% physically correct except for the 327 Chevy in it (the guy had no takers as of two weeks ago)
