So here I am 2 1/2 years later and the truck still does the exact same thing. It has never gotten any worse or set off a CEL to help me figure this out.

I have recently been paying more attention to what it is doing and now I am starting to think this is a transmission thing. As if the transmission upshifts to a gear too high for the speed which is felt as a power loss and then wuickly catches itself and down shifts to where it should be. All of that happens in less than a second.

Has anyone ever heard of such a thing. If I am onto something with this theory, what could cause it?

My 99 has the same issue with cutting out during left turns. I've only noticed it when the fuel level was below 1/4 tank.
I have had the issue in a straight line under heavier than normal accelerating.
Just had the extended crank and then start.
I think my issue may be fuel pump related.
Update this if you find a cure.

I had a similar stutter/power loss issue when accelerating I only fixed today after three years. And only now while chasing the dreaded od light of death. The transmission wiring harness plug leading to my solenoid pack was a train-wreck of exposed wires touching. Anyway, after I wrapped those wires neatly, The stutter is completely gone along with the dreaded limp-home mode. It may be worth checking out for you? I have a 99 expy xlt 5.4 with the 4r100 tranny btw.
