302 has milky oil
Just noticed when I checked my oil today it was milky, I know that means a head gasket is leaking, truck is not running hot, its running fine, can I just change the gaskets out and change the oil and be good, its a 302 with 180,000 miles, engine doesn't smoke or make any knocking sounds

.. gotta open her up to definitively diagnose the cause. Good luck hombre.

Several things can cause milky oil in addition to a leaking head gasket. Cold outside temps, low temperature or non functional thermostat, PVC inoperable and short trips. If any of these apply, may be worth correcting, change the oil and try again. A stock replacement T stat, 190-195 degrees, would be best.
As far as changing the gasket in chassis... it could work. If the head is warped or anything else going on may not work very long though. Real judgement call whether to do much with a 190k mile engine or look for another.
