That's what I figured, it's just a pressure switch. Part of it, I think is that modern brake lamps illuminate before the brakes are even hitting the rotors.
Once I get the brakes bedded in and make a final adjustment for wheel drag, the pedal should be even higher, that may help.

Yeah, modern brake lights come on from an electrical contact adjustable at the pedal arm. You can change over to this system (modify or purchase aftermarket kit) if you want a quick acting light. The old style as you mentioned, is a pressure switch, which takes a certain amount of pressure to activate. If you're using Dot 5, silicone brake fluid, those switches will tend to fail much quicker and regularly.
Actually Ron Francis sells a low pressure brake light switch. It activates in the 20- 50 pound range - most cars are in the 60+ range. I have one on my truck.
