It'll still drive the pulleys, but you're at greater risk of losing it, since you only have one to break. Should probably get two, since the existing one is not going to match a new one perfectly in length. In the olden days, when a LOT of vehicles ran with parallel v-belts, the guys at the FLAPS (back when there were guys there who knew their axle from second base) would take out their belt measuring tool and sell you the two that were closest matching in exact length, so that as you tensioned them, one would not be looser than the other.

As for the broken bolt I got the bracket off that it's stuck in so now I just gotta get it out. I bought a little bolt extractor tool from napa that says 3/16 on it. Does that mean I have to drill it with a 3/16 hole then use the tool to remove the bolt?
Is there any part of the bolt sticking out? Is the bolt hole all the way through, and does the bolt stick out the back side at all? Those easy-out extractors are a PITA, and limited success. There's about a 50/50 chance that you'll just break the extractor off in the bolt. Might wanna start shopping for a replacement bracket.

^^^ I stand corrected! Routing changed, prob. in '87. Non-A/C '85 has belts #1+2 crank-WP-PS, belt #3 crank-WP-alt, belt #4 alt-VP.

Edit - waitaminit... drawing depicts an impossible routing. It shows the alt belt forward of the V/P belt at the water pump, but then the alt belt passes AFT of the V/P belt where they cross:
